Malolactic fermentation analysis and steering via detailed CO2 measurement. In 2023, PARSEC developed the first Direct Analysis of Malolactic Kinetics (DAMK) in vats by improving the resolution of CO2 release analysis by factor 1000, to measure 1/10 mg/l of degraded malic acid and thus provide an effective way to control malolactic fermentation. This high-precision technology which continuously analyses the entire volume of the vat, goes further than standard techniques (chromatography on paper) by providing ongoing information on malic acid degradation kinetics during malolactic fermentation. PARSEC will present its groundbreaking innovation at the 45th OIV Congress in Dijon, France.

The first benefit is the reduced use of fungicides; by providing growers with the reassurance they can avoid unnecessary treatment in the absence of pathogenic agents or in unfavourable weather conditions. Studies show that treatment could be reduced by up to 75%. BioScout continues to prove this figure, with initial tests revealing reductions of more than 25%. BioScout also offers other benefits, including real-time assessment of disease management, which helps consolidate growers’ decisions; the elimination of diseases thanks to targeted spraying, and the reassurance required to switch to milder chemical or organic products.

The format of the event is inspired by TED conferences, while its disruptive content adopts modern codes (short interviews and dynamic sound bites for social media sharing) and all the necessary attributes to foster appeal and forge a connection with viewers, through ‘engaging and embodied’ real-life stories.

The autonomous system monitors microbes on site, without the need for laboratory intervention and with nothing more than a mobile telephone. Once the user takes a sample and enters the information on the mobile application, the data is analysed by AI and then transformed into a dashboard, enabling the monitoring and analysis of microbial patterns, in addition to a mapping of on-site microbes. Users can request this data to be shared online with Alimpex, which provides its expert diagnosis of the situation and suggests hygiene measures to implement. Emerging wine-specific germs will be added to the existing germ library recognised by the AI system, which is currently in training.
